Ingredients
- 6 egg yolks
- 3/4 cup white sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 teaspoon vanilla extract
- 8 ounces mascarpone cheese
- 1 cup strong brewed coffee, cooled
- 4 tablespoons rum or Kahlúa
- 24 ladyfingers
- 2 tablespoons unsweetened cocoa powder
Instructions
- In a medium saucepan, whisk together egg yolks and sugar. Stir in milk and cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let cool. Cover and chill in the refrigerator for at least 1 hour.
- In a medium bowl, beat heavy cream with vanilla extract until stiff peaks form. Gently fold in the mascarpone cheese until well combined.
- Combine coffee and rum (or Kahlúa) in a shallow dish. Split ladyfingers lengthwise and soak them briefly in the coffee mixture.
- Arrange half of the soaked ladyfingers in the bottom of a 7×11 inch dish. Spread half of the mascarpone mixture over the ladyfingers, then layer with half of the whipped cream. Repeat the layers with remaining ingredients.
- Dust the top layer with cocoa powder. Cover and refrigerate for at least 4 hours, preferably overnight, before serving.
