- 3 lbs. sweet potatoes (about 5-6 medium)
- 6 tablespoons butter, melted
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1/4 cup half-and-half
- For the Brown Sugar Streusel Topping:
- 3 tablespoons salted butter, softened
- 1 cup brown sugar
- 1/3 cup all-purpose flour
Instructions
- Preheat your oven to 400°F (200°C). Place sweet potatoes on a baking sheet and pierce with a fork. Bake for 50-60 minutes, or until soft. Allow to cool slightly, then cut in half and scoop out the flesh.
- In a large bowl, combine the sweet potato flesh with melted butter, sugar, eggs, vanilla extract, cinnamon, salt, and half-and-half. Whip until smooth and creamy.
- Transfer the sweet potato mixture to a 9×13-inch baking dish, spreading it evenly.
- In a separate bowl, mix softened butter, brown sugar, and flour until crumbly. Sprinkle evenly over the sweet potato base.
