  • 1 (5-pound) bone-in beef prime rib roast
  • 1 tablespoon olive oil
  • 2 teaspoons Montreal-style steak seasoning
  • 1 teaspoon chopped garlic
  • 1 teaspoon Italian seasoning
  • 1 teaspoon mustard powder

Instructions

  1. Place the prime rib roast, bone side down, in a roasting pan.
  2. In a small bowl, whisk together olive oil, steak seasoning, chopped garlic, Italian seasoning, and mustard powder. Rub the mixture all over the roast.
  3. Let the seasoned roast sit at room temperature for about 45 minutes.
  4. Preheat your oven to 450°F (230°C).
  5. Place the roast in the oven and bake for 20 minutes. Insert a meat thermometer into the thickest part of the roast, avoiding the bone.
  6. Lower the oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches 145°F (65°C) for medium, approximately 1.5 to 2 hours.
  7. Remove the roast from the oven, cover with aluminum foil, and let it rest for 10-15 minutes before slicing.
