Ingredients

  • 4 large russet potatoes, washed and sliced into 1/4-inch rounds
  • 2 cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup chopped chives or green onions
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange the potato slices on the prepared baking sheet and brush both sides with olive oil. Sprinkle with salt and pepper.
  3. Bake for 20 minutes, flip each slice, and bake for an additional 20 minutes until golden and crispy.
  4. Remove from the oven and top each slice with shredded cheddar cheese. Return to the oven for 5 minutes or until the cheese is melted.
  5. Sprinkle the loaded potato slices with crumbled bacon and chopped chives.
  6. Serve warm with a dollop of sour cream for dipping.
